Cancer Fighting Red Cabbage Salad with Chia Seeds
What a wonderful summer or anytime salad. It is healthy, easy to make and very delicious. This is an adjusted recipe from the Cleveland Clinic’s Center for Lifestyle Medicine with some of my optimum ideals for better taste and crunch. and a splash of inflammation-reducing omega-3s. A study in 2008 found that red cabbage consumption was linked to not only to cancer prevention but to brain and heart health as well! Dig in and be well my friends.
- Combine the vinegar, lemon juice, yogurt, parsley, honey, garlic, chia seeds, salt and pepper.
- Mix well and let sit for 20 minutes under refrigeration to allow chia seeds to swell.
- Add cabbage, carrot, onion and toss until well coated. Cover and refrigerate until ready to serve.
